Tamale Mac and Cheese

Unsaved Tamale Mac and Cheese

Ingredients

  • 16 oz Elbow Macaroni
  • 1 tbsp Vegetable oil
  • 1 cup White onions, sliced
  • 1 tbsp Peeled Garlic Cloves, minced
  • 1 1/2 tsp Ground Cumin
  • 2 cups Heavy Whipping Cream
  • 1 cup Whole Milk
  • 3 cups Restaurant Style 50/50 Blend Cheese, shredded, reserve 1 cup for adding at the end
  • 2 tsp Corn Starch
  • 8 Tamales de puerco, husks removed and tamales roughly chopped

Instructions

  1. Bring a large pot of water to a boil, add pasta and cook according to package instructions, drain and set aside.
  2. Set another pot or same pot once cleaned out over medium high heat, add oil, onions, garlic and cumin. Stir-fry for 3 to 5 minutes or until onions are just soft.
  3. Add milk, and cream and gently whisk to keep it from burning. Turn heat down to medium and allow sauce to simmer until it starts to just reduce slightly.
  4. While sauce is simmering, combine cheese and cornstarch into a bowl and toss to combine.
  5. Add cheese and cornstarch mixture to pot and whisk until sauce starts to thicken, add tamales, pasta and remaining cheese.
  6. Stir to combine, turn off heat and allow cheese to melt before serving, season to taste as needed.
  7. Chef's note: My favorite way to serve this is to place mac and cheese into a prepared baking dish and cover with more cheese and crispy fried onions, bake at 350F for 5 to 7 minutes.
