Unsaved Tailgate Caprese Salad Stacks

Ingredients

  • 2 Large Beefsteak Tomatoes, cored and sliced into 1-inch thick slices
  • 1 Medium red onion, peeled, sliced into 3 large round slices
  • 2 tbsp Extra virgin olive oil
  • 1 tsp H-E-B Select Ingredients Texas Originals Steak Seasoning Spice Blend
  • 8 oz Fresh Mozzarella, sliced into 6 equal slices
  • 1/2 cup Pesto Sauce
  • 2 tbsp Aged Balsamic Vinegar of Modena

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush tomato and onion slices with olive oil and season with steak seasoning. Grill for 2 to 3 minutes per side or until slightly softened and grill marked.
  3. Place tomato slices on a serving tray. Lay one piece of mozzarella on top of each tomato. Break onions into rings and lay over top of tomatoes and cheese.
  4. Place a spoonful of pesto on top of each stack then drizzle balsamic vinegar over the top. Serve warm.
