Unsaved Taco Fiesta Surprise Salad

Ingredients

  • 1 tbsp Canola oil
  • 16 oz Lean ground turkey
  • 2 tbsp Chili powder
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 1/2 Iceberg lettuce, shredded
  • 1/2 cup Fresh cilantro, chopped
  • 1 cup Fat free cheddar cheese, shredded
  • 1 1/2 cups Tomato, chopped
  • 4 Baked tostadas

Instructions

  1. Heat a heavy bottom skillet over medium heat for 2 minutes.
  2. Add canola oil and ground turkey and stir-fry until meat is browned.
  3. Add chili powder and 1/2 cup water and bring to boil.
  4. Reduce heat to low and cook for 5 minutes. Season with salt and pepper.
  5. Combine lettuce, cilantro, tomatoes and turkey in salad bowl; toss gently to mix.
  6. Top each taco salad with 1/4 cup shredded cheese and one baked tostada.
