Swiss Chard with Glazed Shiitake Mushrooms

Serves 4

Ingredients

  • 1 tbsp Olive oil
  • 1 bunch Swiss chard, (about 1 pound, chopped into bite-sized pieces, woody stems removed)
  • 8 oz Shiitake mushrooms, sliced
  • 1/4 cup Shallot, very thinly sliced
  • 2 tsp Fresh garlic, finely minced
  • 1 tbsp Aged balsamic vinegar

Instructions

  1. Heat a large skillet over medium-high heat. Add oil and Swiss chard, stir, and cook for 1 to 2 minutes until chard becomes glossy and starts to wilt.
  2. Add mushrooms and shallots and toss to coat lightly with any remaining oil. Cook for 6 to 8 minutes until mushrooms start to turn golden brown.
  3. Add garlic and drizzle with balsamic vinegar and toss to coat. Cook for 1 minute, just to heat through. Season with salt and pepper to taste.
