Sweet & Spicy Glazed Brisket

Ingredients

  • 4 lb Fully-trimmed brisket
  • 1 cup Brown sugar
  • 1 tbsp Ground cumin
  • 1/2 tsp Ground cloves
  • 2 tsp Paprika
  • 1 tbsp Kosher salt

Instructions

  1. Preheat grill to medium-low.
  2. Score brisket using a sharp knife to make shallow cuts in the surface, about 1/4 inch deep and 1 inch apart.
  3. In a small mixing bowl, combine brown sugar, cumin, cloves, paprika and salt.
  4. Rub brown sugar mixture over surface of brisket and into scores.
  5. Place brisket fat-side down on grill. Smoke 2 hours without turning.
  6. Preheat oven to 250°F.
  7. Remove meat from grill, wrap tightly in heavy-duty aluminum foil and place on a baking sheet. Bake 2 hours.
  8. Remove from oven, allow to stand 30-60 minutes before serving.
