Sweet Potato Biscuits

Ingredients
- 1 lb Sweet potatoes
- 2 1/2 cups Whole wheat all purpose baking mix
- 2 tsp Double Acting Baking Powder
- 1/2 cup Green onion, chopped
- 1/2 tsp Ground Cayenne Pepper
- 1/2 tsp Ground Cinnamon
- 3 tbsp Extra Virgin Olive Oil
- 1/4 cup Brown Sugar
- 1/4 cup Low Fat Cultured 1% Milkfat Buttermilk
Instructions
- Heat oven to 425°F.
- Line two baking sheets with parchment paper, set aside.
- Microwave sweet potatoes on high power 5 minutes or until soft. Peel. Mash with fork (makes about 2 cups). You can also use canned sweet potatoes.
- Combine cooked potatoes, baking mix, baking powder, green onions, cayenne pepper, and cinnamon in food processor bowl. Process 10 seconds. Add olive oil, brown sugar and buttermilk. Process 5 seconds.
- Place dough on floured surface, roll out to 1/2-inch thickness. Use 2-inch biscuit cutter or favorite holiday 2-inch cutter.
- Place biscuits on prepared baking sheets. Bake 12 minutes or until golden brown.
