Sweet Potato and Black Bean Burritos

Ingredients

  • 1/2 cup Large avocado, optional
  • 1/2 cup 2% shredded cheddar cheese
  • 1/2 cup Enchilada sauce
  • 4 Large eggs, beaten
  • 5 Wheat tortillas
  • 1 1/2 cups No salt added black beans
  • 1 Large Sweet potatoes

Instructions

  1. Preheat oven 375ºF.
  2. Roast sweet potato until tender, approximately 30 minutes. Remove from oven and allow it to cool. Remove from skin and gently mash.
  3. Wash, rinse, and drain black beans. Then place in microwave safe bowl 3 minutes or until warmed through.
  4. Beat eggs in large bowl.
  5. Preheat large non-stick skillet to medium heat. Lightly coat with non-stick spray. Cook eggs until done.
  6. To build burritos, heat tortillas until pliable.
  7. Place 2 tablespoons of sweet potatoes in center of tortilla, top with cheese, eggs, 2 tablespoons of enchilada sauce, black beans and avocado. Fold left and right sides of tortilla in and roll.
  8. Note: burritos can be made in advance and frozen individually. To reheat microwave 4 - 5 minutes turning frequently. If freezing, do not add avocado until ready to eat, as it will discolor.
