Unsaved Sweet and Spicy Scorched Cabbage

Ingredients

  • 1/4 cup Soy sauce
  • 3 tbsp Maple syrup
  • 1 tbsp Pomegranate molasses
  • 2 tbsp Rice vinegar
  • 1/2 tsp Red pepper flakes
  • 1 tsp Fresh lime zest
  • 1 Medium head of red cabbage
  • 2 tbsp Olive oil
  • 1 tbsp Toasted sesame seeds
  • 1/4 cup Green onions, very thinly sliced

Instructions

  1. Heat a large skillet or flat-top grill to medium-high heat.
  2. To make sauce, mix together soy sauce, maple syrup, pomegranate molasses, rice vinegar, red pepper flakes, and lime zest in a small bowl. Set aside.
  3. Remove any wilted leaves on outside of cabbage. Turn cabbage on its side with the stem facing sideways and cut 3/4 inch thick slices. Discard the stem end.
  4. Drizzle olive oil generously over cabbage slices and sprinkle with sesame seeds. Place in skillet and sear without moving for 4 to 5 minutes or until edges start to get crispy and dark brown. Flip cabbage. It may partially come apart when flipped but continue to sear well. Drizzle sauce over cabbage before removing from heat and toss gently to coat.

  6. Mound on a serving platter. Drizzle any extra sauce over the top and garnish with green onions. Serve immediately.
