Unsaved Summer Salad

Ingredients

  • 1 cup Bulgar and red quinoa quick cook grains, uncooked
  • 1 Large fresh mango, diced
  • 1 cup Fresh sweet grape tomatoes, halved
  • 1 Large avocado, diced
  • 1/2 cup Sweet onions, grated
  • 2 Lime(s), juiced

Instructions

  1. Prepare bulgur and quinoa according to package directions.
  2. In a large mixing bowl, combine grains, mango, and vegetables.
  3. Serve immediately or chill for 30 minutes.
  4. Chef's Note: Before serving, pour juice over salad and toss well to coat.
