Sugar Cookies made with Gluten Free Flour

Serves 12

Ingredients

  • 1 Large eggs, room temperature
  • 1/4 cup Liquid coconut oil
  • 1/4 cup Granulated sugar
  • 2 tbsp Honey
  • 2 tsp Vanilla extract
  • 1 1/2 cups Almond flour
  • 4 tbsp Coconut flour
  • 1 tsp Baking powder
  • 1/2 tsp Kosher salt

Instructions

  1. Preheat oven to 350ºF.
  2. Place egg and shortening in a food processor and pulse 20 seconds.
  3. Add sugar, honey, and vanilla extract. Pulse until combined.
  4. Add flours, baking powder and salt, then pulse until a dough is formed.
  5. Scrape down dry ingredients along the side of the bowl that did not get combined. Pulse again.
  6. Using a teaspoon, scoop out dough on a baking sheet.
  7. Bake 10-12 minutes or until cookies are done. Cool completely, then decorate as desired.
