Quick & easy:Stuffed Portabella with Ground Pork and Herbed Cauliflower Rice

Ingredients
- 8 oz Natural ground pork, 90% lean
- 2.5 oz Diced red onion
- 12 oz Garden herb cauliflower rice
- 4 Large organic portabella cap mushrooms, dark brown gills on bottom side gently removed with a spoon
- 4 oz Mozzarella cheese, shredded
Instructions
- Preheat oven to 400ºF. Lightly oil a baking sheet and set aside.
- Place a skillet over medium-high heat and spray lightly with oil.
- Add pork and onions to hot skillet, breaking meat into small chunks. Cook until pork is nicely crisp.
- Add cauliflower rice and stir through. Remove from heat.
- Arrange mushroom caps on prepared pan. Spoon in filling and evenly divide cheese between the mushrooms.
- Bake for 10 minutes, or just long enough for mushrooms to be cooked through and cheese to melt. Serve immediately.
