Strawberry Basil Balsamic Grilled Cheese

Ingredients

  • 2 tbsp Salted butter
  • 4 slices Country white sourdough bread
  • 1 cup Strawberries, sliced
  • 6 oz Fresh mozzarella, chopped
  • 1/4 cup Fresh basil, chopped
  • 1 tbsp Balsamic reduction

Instructions

  1. Heat 1 tablespoon of butter in a non-stick skillet over medium-low heat.
  2. Place 1 piece of bread into the skillet and top with half of the strawberries, cheese, basil and a drizzle of balsamic reduction. Top with the second slice of bread and gently press with spatula.
  3. Cook for several minutes until crisp and golden on the bottom then flip adding additional butter if needed. Continue to cook until the other side is also crisp and golden.
  4. Repeat with the second sandwich.
