Strawberry Almond Salad with Vinaigrette

Ingredients

  • 2 Fresh red onion(s), sliced in rings and separated
  • 1/4 cup Sliced almonds
  • 1/4 cup 100% pomegranate juice
  • 1 tsp Dijon mustard
  • 2 tbsp Granulated sugar
  • 1/2 cup Reduced fat crumbled feta cheese
  • 5 oz Baby spring salad mix
  • 2 tbsp Red wine vinegar
  • 2 cups Fresh strawberries, sliced
  • 2 tbsp Extra virgin olive oil

Instructions

  1. Heat heavy skillet over medium heat and combine sugar and almonds.
  2. Stir for 3-4 minutes, until the sugar melts and glazes the nuts.
  3. Layer spring mix, strawberries, onions and feta cheese in a bowl. Cover with plastic wrap and chill until ready to serve.
  4. Combine olive oil, vinegar, mustard and pomegranate juice in a bottle. Shake until blended well and set aside at room temperature.
  5. Immediately spread almonds on a sheet of foil and cool. Break almonds apart once they are cool.
  6. Before serving, combine glazed almonds and salad.
  7. Serve with vinaigrette.
