Stove Top Chicken

Ingredients

  • 2 lb Fresh, whole chicken
  • 1/2 tsp Garlic powder
  • 1 tsp Kosher salt
  • 1 tsp Ground black pepper
  • 1/3 cup White wine
  • 2 tbsp Extra virgin olive oil

Instructions

  1. Remove neck and giblets if applicable. Rinse and pat chicken dry with paper towels. Sprinkle with garlic powder, salt and pepper.
  2. In a large Dutch oven with a lid, heat oil on medium-high.
  3. Add whole chicken, breast-side down, and sear 5 minutes until browned. Turn chicken over and add white wine and enough water to fill 1/4 of dutch oven.
  4. Cover, reduce heat to Medium-Low, and cook 1 hour or until thermometer inserted in the thickest part of the thigh (avoid touching bone) reads 170°F.
