Unsaved Stir-Fried Spinach with Pine Nuts & Raisins

Ingredients

  • 1/3 cup Golden raisins
  • 1/2 cup Water
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Sweet onions, chopped
  • 2 Garlic cloves, thinly sliced
  • 2 tbsp Blanched slivered almonds
  • 5 oz Baby spinach

Instructions

  1. Combine raisins and 1/2 cup water in a microwave safe bowl, cover and microwave on high power for 1 minute; remove from microwave, and set aside for 15 minutes to plump raisins.
  2. Heat a large, heavy bottom skillet over medium heat for 3 minutes, then add olive oil and onion and stir-fry for 1 minute.
  3. Add garlic and almond slivers, and stir-fry 30 more seconds; add baby spinach, and stir-fry 2 minutes; remove from heat, and add the plumped, drained raisins.
