Stew-pendous Beef Caldillo Taco

Ingredients

  • 2 Red radishes
  • 2 cups Vinegar
  • 1 cup Water
  • 5 Garlic cloves, smashed
  • 1 cup White onions, sliced thinly
  • 1 tsp Ground black pepper, whole
  • 2 tbsp Granulated sugar
  • 2 tbsp Kosher salt
  • 1 cup Chipotle garlic salsa
  • 2 lb Beef caldillo
  • 1 Flour tortillas

Instructions

  1. Wash, rinse, and trim radishes and slice very thin from the top to the bottom. Set aside in a glass bowl.
  2. in a medium saucepan combine vinegar, water, garlic, onion, peppercorns, sugar and salt. Bring to a boil and cook 15 minutes.
  3. Remove from heat and pour hot liquid over the radishes. Cover and chill at least 2-3 hours until liquid is cool and radishes are pickled.
  4. Once radishes are chilled place a sauté pan over medium-high heat, add salsa and beef. Cook until salsa has completely reduced and meat is fully cooked (about 10-15 minutes).
  5. To build tacos place caldillo in tortillas then top with radish escabeche. Season to taste with salt and pepper. Add your favorite taco fixings if desired.
