Steelhead Trout Power Bowl

Ingredients
- 1 Apple
- 16 oz Diced sweet potatoes
- 1 tbsp Grapeseed oil
- 1 cup French fried onions
- 1 1/2 lb Steelhead trout fillet, cut into 4 equal portions
- 1 Chopped salad kit - sweet kale
- 1 package Quick heat quinoa and bulgur
- 4 oz Goat cheese crumbles
Instructions
- PREP: Adjust oven rack to middle position and preheat to 375°F. Cover a sheet tray with foil and set aside. Wash and dry apple.
- BAKE: Combine sweet potatoes with oil and 2 Tbsp of fig mustard. Toss until well coated. Pour out onto half of the prepared sheet tray and spread out. Place in the oven and bake for 10 minutes.
- CUT: Remove apple core, chop apple into small dice, then place in a bowl and set aside.
- BAKE: In a small bowl crush the fried onions into small crumbs. Remove the sheet tray from the oven and place the 4 steelhead trout portions on the remaining half of the tray. Top each with 1 Tbsp of fig mustard and 2 Tbsp of the crushed fried onions. Return to the oven and bake for an additional 15 minutes.
- ASSEMBLE: Toss salad kit with included ingredients and dressing in a bowl. Cook quinoa and bulgur according to package directions. Divide salad and grains evenly between 4 bowls.
- SERVE: Top each bowl with diced apple, goat cheese, roasted sweet potato, and a trout portion.
