Steak Sammies with Horseradish and Blue Cheese Sauce

Ingredients
- 1 lb Natural beef tenderloin steak
- 1 tsp Ground black pepper
- 1 tsp Kosher salt
- 1 tbsp Extra virgin olive oil
- 1/2 cup Non fat Greek yogurt
- 1 tbsp Horseradish sauce
- 2 tbsp Crumbled blue cheese
- 1 tsp Lemon, juiced
- 4 Ciabatta rolls
- 1 head Butter lettuce, chopped
- 1 Medium beefsteak tomato, sliced
Instructions
- Preheat grill to medium-high heat. Season steak with salt, pepper and a small amount of olive oil.
- Place beef on the grill and cook for several minutes per side. Remove steak from the grill and allow it to rest for several minutes before slicing.
- To make sauce, combine yogurt, horseradish, blue cheese and lemon juice together in bowl and mix well.
- Spread the sauce generously onto each side of bread. Add steak then top with lettuce and tomatoes.
