Steak Sammies with Horseradish and Blue Cheese Sauce

Serves 4

Ingredients

  • 1 lb Natural beef tenderloin steak
  • 1 tsp Ground black pepper
  • 1 tsp Kosher salt
  • 1 tbsp Extra virgin olive oil
  • 1/2 cup Non fat Greek yogurt
  • 1 tbsp Horseradish sauce
  • 2 tbsp Crumbled blue cheese
  • 1 tsp Lemon, juiced
  • 4 Ciabatta rolls
  • 1 head Butter lettuce, chopped
  • 1 Medium beefsteak tomato, sliced

Instructions

  1. Preheat grill to medium-high heat. Season steak with salt, pepper and a small amount of olive oil.
  2. Place beef on the grill and cook for several minutes per side. Remove steak from the grill and allow it to rest for several minutes before slicing.
  3. To make sauce, combine yogurt, horseradish, blue cheese and lemon juice together in bowl and mix well.
  4. Spread the sauce generously onto each side of bread. Add steak then top with lettuce and tomatoes.
