Star Fruit Chutney

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 2 cups Star fruit, large dice
  • 1 tbsp Fresh ginger root, grated
  • 1/2 cup Red onions, medium diced
  • 1/2 cup Red bell pepper, medium diced
  • 1 tbsp Garlic cloves, chopped
  • 1/2 Jalapeño peppers, halved, stem removed
  • 2 tbsp Brown sugar
  • 1 tbsp Kosher salt
  • 2 tbsp Limes, juiced
  • 1 tbsp Fresh cilantro, finely chopped

Instructions

  1. Heat a medium non-reactive saucepan over medium heat, then add oil. Add in star fruit, ginger, red onion, red bell pepper, garlic, and jalapeño. Cook stirring frequently for 3 to 4 minutes until onions begin to soften.
  2. Add brown sugar, salt, and lime juice and stir to dissolve. Reduce heat to medium-low and cook stirring occasionally for 20 minutes.
  3. Remove pan from heat, stir in cilantro and remove jalapeño if desired. Mash with a fork until no large chunks remain (or place in a food processor or blender and pulse until combined). Refrigerate until ready to use.
