Stacked Enchilada Verde Casserole

Ingredients

  • 32 oz Hatch Verde tortilla soup
  • 12 oz Mild pico de gallo
  • 12 oz Fully Cooked Seasoned Shredded Chicken
  • 16 oz Mexican Blend Shredded Cheeses
  • 12 Yellow corn tortillas, 6-inch
  • 1 cup Sour cream

Instructions

  1. Heat oven to 375°F.
  2. Spray a 9 x 13-inch baking dish with non-stick spray.
  3. In a large mixing bowl combine cooked beef, Pico de Gallo, Sour Cream, half of the cheese and Jar of Cheese Enchilada Soup base.
  4. Repeat 2 more times using the rest of the tortillas and mixture.
  5. Spoon half the tortilla soup over chicken and top with half the cheese.
  6. Repeat layers in the same order, ending with cheese.
  7. Cover with foil and bake 30 minutes. Remove foil and bake 5 more minutes or until cheese melts and casserole is hot in the center.
  8. Serve with sour cream and pico de gallo.
