Stacked Enchilada Verde Casserole

Ingredients
- 32 oz Hatch Verde tortilla soup
- 12 oz Mild pico de gallo
- 12 oz Fully Cooked Seasoned Shredded Chicken
- 16 oz Mexican Blend Shredded Cheeses
- 12 Yellow corn tortillas, 6-inch
- 1 cup Sour cream
Instructions
- Heat oven to 375°F.
- Spray a 9 x 13-inch baking dish with non-stick spray.
- In a large mixing bowl combine cooked beef, Pico de Gallo, Sour Cream, half of the cheese and Jar of Cheese Enchilada Soup base.
- Repeat 2 more times using the rest of the tortillas and mixture.
- Spoon half the tortilla soup over chicken and top with half the cheese.
- Repeat layers in the same order, ending with cheese.
- Cover with foil and bake 30 minutes. Remove foil and bake 5 more minutes or until cheese melts and casserole is hot in the center.
- Serve with sour cream and pico de gallo.
