Spring Green Minestrone

Ingredients
- 1 tbsp Extra virgin olive oil
- 1 cup White onion(s), diced
- 2 tbsp Fresh garlic clove(s), minced
- 2 cups Kale, chopped
- 15 oz White beans, with liquid
- 32 fl oz Low sodium vegetable stock
- 1 cup Green peas
- 2 cups Zucchini squash, chopped
- 1/4 cup Fresh Italian parsley, chopped
- 1 Fresh lemons, juiced
- 1/4 cup Fresh basil, chopped
- 1 tsp Kosher salt
- 1/2 tsp Ground black pepper
Instructions
- Place a large stock pot on medium-high heat, add in olive oil.
- Add onions, garlic and kale, and cook for several minutes, stirring frequently.
- Add white beans, vegetable stock, peas, zucchini, parsley, lemon, basil, and season to taste.
- Simmer for 10 to 20 minutes, or until zucchini is tender.
- Serve warm.
