Spring Green Minestrone

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1 cup White onion(s), diced
  • 2 tbsp Fresh garlic clove(s), minced
  • 2 cups Kale, chopped
  • 15 oz White beans, with liquid
  • 32 fl oz Low sodium vegetable stock
  • 1 cup Green peas
  • 2 cups Zucchini squash, chopped
  • 1/4 cup Fresh Italian parsley, chopped
  • 1 Fresh lemons, juiced
  • 1/4 cup Fresh basil, chopped
  • 1 tsp Kosher salt
  • 1/2 tsp Ground black pepper

Instructions

  1. Place a large stock pot on medium-high heat, add in olive oil.
  2. Add onions, garlic and kale, and cook for several minutes, stirring frequently.
  3. Add white beans, vegetable stock, peas, zucchini, parsley, lemon, basil, and season to taste.
  4. Simmer for 10 to 20 minutes, or until zucchini is tender.
  5. Serve warm.
