Spinach Lasagna

Ingredients

  • 8 Lasagna noodles, prepared according to package instructions
  • 30 oz Frozen whole leaf spinach, thawed and drained well
  • 2 Large eggs, egg whites only
  • 1 1/2 cups Low fat cottage cheese
  • 3 cups Shredded reduced fat mozzarella cheese
  • 3/4 cup Shredded parmesan cheese
  • 58 oz Tomato sauce

Instructions

  1. Preheat oven to 350°F. This recipe requires 1 very large lasagna pan.
  2. Mix drained spinach with egg whites.
  3. Layer ingredients as follows: 1 1/2 cups sauce, 4 lasagna noodles, 1 1/2 cups sauce, 3/4 cup cottage cheese, 1 1/2 cup spinach mixture, 4 lasagna noodles, 1 1/2 cups sauce, 3/4 cup cottage cheese, 3/4 cup mozzarella cheese, 1 1/2 cups spinach mixture, 1/4 cup Parmesan cheese and 1 1/2 cups sauce.
  4. Cover pan with foil and bake approximately 1 hour. Remove foil and let stand 10 minutes before cutting into 12 equal portions.
  5. For garnish, serve extra Parmesan on the side, sprinkle 1 teaspoon per serving.
