Spinach Fettuccine Alfredo

Ingredients
- 2 cups 2% milk
- 1 tsp Kosher salt
- 12 oz Whole wheat fettuccine, cooked
- 3 Garlic cloves, crushed
- 1/3 cup Italian style, Parmesan cheese, shredded
- 2 cups Fresh spinach, chopped
- 3 tbsp Unbleached all purpose flour
- 3 oz Low fat cream cheese
- 1/2 tbsp Salted butter
Instructions
- Place milk, cream cheese, flour and salt in a blender and blend until completely smooth.
- Melt butter in a non-stick saucepan over medium-high heat. Add garlic and cook approximately 30 seconds.
- Add in milk mixture and cook 3-4 minutes, stirring constantly until sauce comes to a low simmer.
- Add chopped spinach and cook an additional 2 minutes.
- Remove from heat and stir in Parmesan cheese.
- Cover and let it stand 10 minutes before serving over cooked fettuccine.
