Spinach and Feta Baked Tomatoes

Serves 4
Ingredients
- 4 Greenhouse tomatoes, top 1/4 removed
- 1/4 cup Reduced fat feta cheese, crumbled
- 1 cup Baby spinach, chopped
- 4 Large eggs
- 1/2 tsp Ground black pepper
Instructions
- Preheat oven to 375ºF. Line a baking sheet with foil and set aside.
- With a sharp knife remove 1/4 top of tomato and remove flesh from the inside, creating a cup. Repeat for the remaining 3 tomatoes.
- Add feta cheese to the bottom of each tomato. About 1 tablespoon per tomato, then top with spinach.
- Crack eggs and place on top of spinach. Season with pepper and place in oven.
- Bake for 20 minutes or until the egg has set and is cooked to desired doneness.
- Allow tomatoes to cool briefly before serving.
