Spinach and Feta Baked Tomatoes

Serves 4

Ingredients

  • 4 Greenhouse tomatoes, top 1/4 removed
  • 1/4 cup Reduced fat feta cheese, crumbled
  • 1 cup Baby spinach, chopped
  • 4 Large eggs
  • 1/2 tsp Ground black pepper

Instructions

  1. Preheat oven to 375ºF. Line a baking sheet with foil and set aside.
  2. With a sharp knife remove 1/4 top of tomato and remove flesh from the inside, creating a cup. Repeat for the remaining 3 tomatoes.
  3. Add feta cheese to the bottom of each tomato. About 1 tablespoon per tomato, then top with spinach.
  4. Crack eggs and place on top of spinach. Season with pepper and place in oven.
  5. Bake for 20 minutes or until the egg has set and is cooked to desired doneness.
  6. Allow tomatoes to cool briefly before serving.
