Unsaved Spinach and Caramelized Onion Quiche

Ingredients

  • 2 tsp Extra virgin olive oil
  • 1 cup Yellow onions, julienned
  • 1 cup Cherry tomatoes
  • 1 Baby Spinach
  • 2 Garlic clove, minced
  • 8 Large Eggs
  • 4 fl oz Reduced Fat 2% Milk
  • 2 oz Shredded parmesan cheese

Instructions

  1. Preheat oven to 375ºF.
  2. Place large sauté pan over medium-high heat. Add olive oil and onions. Cook several minutes until onions are very tender and a deep golden color. Stir frequently.
  3. Turn heat up to medium-high and add in tomatoes, spinach and garlic. Cook several minutes until spinach is completely wilted. Remove from heat.
  4. Combine eggs and milk together and mix well.
  5. Spray spring form pan or pie pan with nonstick cooking spray.
  6. Add spinach mixture and pour liquid on top.
  7. Sprinkle with Parmesan cheese and place in oven. Bake until center has set. Let quiche cool before slicing.
  8. Serve with mixed green salad.
