Spinach and Caramelized Onion Quiche

Ingredients
- 2 tsp Extra virgin olive oil
- 1 cup Yellow onions, julienned
- 1 cup Cherry tomatoes
- 1 Baby Spinach
- 2 Garlic clove, minced
- 8 Large Eggs
- 4 fl oz Reduced Fat 2% Milk
- 2 oz Shredded parmesan cheese
Instructions
- Preheat oven to 375ºF.
- Place large sauté pan over medium-high heat. Add olive oil and onions. Cook several minutes until onions are very tender and a deep golden color. Stir frequently.
- Turn heat up to medium-high and add in tomatoes, spinach and garlic. Cook several minutes until spinach is completely wilted. Remove from heat.
- Combine eggs and milk together and mix well.
- Spray spring form pan or pie pan with nonstick cooking spray.
- Add spinach mixture and pour liquid on top.
- Sprinkle with Parmesan cheese and place in oven. Bake until center has set. Let quiche cool before slicing.
- Serve with mixed green salad.
