Spicy Tuna Sandwiches

Ingredients

  • 6.4 oz Chunk light tuna pouch, drained
  • 2 Large eggs, hard boiled, peeled and chopped
  • 1/4 cup Mayonnaise
  • 2 tbsp Green pickled sliced jalapeño peppers, chopped
  • 1 Large avocado, peeled, seeded and chopped
  • 1/4 cup Red bell pepper, chopped
  • 8 Honey wheat bread slices, toasted if desired

Instructions

  1. Place tuna, eggs, mayonnaise, jalapenos, avocado and red pepper in a mixing bowl and toss to combine.
  2. Spread 1/3-1/2 cup spicy tuna sandwich spread on 4 slices of bread and top with remaining bread slices.
