Spicy Tuna Casserole

Ingredients

  • 3 tbsp Extra Virgin Olive Oil
  • 1 1/2 cups Yellow onions, diced
  • 1 1/2 cups White mushrooms, roughly chopped
  • 2 tbsp Garlic Cloves, minced
  • 14.5 oz Dice Fire Roasted Tomatoes with Garlic, drained
  • 16 fl oz Half & Half
  • 32 oz Easy melt queso blanco, cubed into 2-inch blocks
  • 16 oz Medium egg noodles, cooked to package instructions
  • 24 oz Chunk white meat albacore tuna in water, drained
  • 16 oz Frozen peas & carrots
  • 2 tsp Ground Black Pepper
  • 1 cup Whole Milk Mozzarella Shredded Cheese
  • 1 cup Japanese Style Panko Plain Bread Crumbs

Instructions

  1. Preheat oven to 400°F.
  2. Preheat large pot over medium-high with olive oil.
  3. Add onions and mushrooms. Sauté 5 to 7 minutes, until onions are translucent.
  4. Add garlic, cooking until fragrant.
  5. Add tomatoes, half and half, and Easy Melt. Stir over medium heat until cheese is melted.
  6. Add pasta, tuna, peas and carrots, and pepper to taste. Stir to combine.
  7. Grease 9x13-inch casserole dish. Pour mixture into casserole dish.
  8. Top with mozzarella cheese and panko bread crumbs.
  9. Place casserole in oven 20 to 25 minutes, until casserole is bubbly and bread crumbs are golden.
