Spicy Tuna Casserole

Ingredients
- 3 tbsp Extra Virgin Olive Oil
- 1 1/2 cups Yellow onions, diced
- 1 1/2 cups White mushrooms, roughly chopped
- 2 tbsp Garlic Cloves, minced
- 14.5 oz Dice Fire Roasted Tomatoes with Garlic, drained
- 16 fl oz Half & Half
- 32 oz Easy melt queso blanco, cubed into 2-inch blocks
- 16 oz Medium egg noodles, cooked to package instructions
- 24 oz Chunk white meat albacore tuna in water, drained
- 16 oz Frozen peas & carrots
- 2 tsp Ground Black Pepper
- 1 cup Whole Milk Mozzarella Shredded Cheese
- 1 cup Japanese Style Panko Plain Bread Crumbs
Instructions
- Preheat oven to 400°F.
- Preheat large pot over medium-high with olive oil.
- Add onions and mushrooms. Sauté 5 to 7 minutes, until onions are translucent.
- Add garlic, cooking until fragrant.
- Add tomatoes, half and half, and Easy Melt. Stir over medium heat until cheese is melted.
- Add pasta, tuna, peas and carrots, and pepper to taste. Stir to combine.
- Grease 9x13-inch casserole dish. Pour mixture into casserole dish.
- Top with mozzarella cheese and panko bread crumbs.
- Place casserole in oven 20 to 25 minutes, until casserole is bubbly and bread crumbs are golden.
