Spicy Squash Casserole

Ingredients

  • 1 Vegetable Oil No-Stick Cooking Spray
  • 4 Medium zucchini squash, shredded
  • 1 cup Panko Plain Bread Crumbs
  • 2 cups Monterey jack with jalapenos cheese, shredded
  • 2 Large eggs, beaten
  • 1/2 cup White onion, chopped

Instructions

  1. Heat oven to 350°F.
  2. Spray a 2-quart casserole dish with non-stick cooking spray.
  3. Cook squash in 2 cups of water over high heat for 5 minutes; drain and return to cooking pot.
  4. Add remaining ingredients; stir to combine.
  5. Pour mixture into prepared dish.
  6. Bake covered for 15 minutes then uncover and cook an additional 5-10 minutes until browned.
