Spicy Squash Casserole

Ingredients
- 1 Vegetable Oil No-Stick Cooking Spray
- 4 Medium zucchini squash, shredded
- 1 cup Panko Plain Bread Crumbs
- 2 cups Monterey jack with jalapenos cheese, shredded
- 2 Large eggs, beaten
- 1/2 cup White onion, chopped
Instructions
- Heat oven to 350°F.
- Spray a 2-quart casserole dish with non-stick cooking spray.
- Cook squash in 2 cups of water over high heat for 5 minutes; drain and return to cooking pot.
- Add remaining ingredients; stir to combine.
- Pour mixture into prepared dish.
- Bake covered for 15 minutes then uncover and cook an additional 5-10 minutes until browned.
