Spicy Spaghetti Carbonara

Serves 4

Ingredients

  • 16 oz Spaghetti
  • 1 cup H-E-B Premium Campfire Bacon, diced small
  • 1 tbsp Extra virgin olive oil
  • 1/2 tsp Crushed red pepper
  • 4 Large eggs, egg yolks only
  • 1/4 cup Pecorino Romano cheese
  • 1/3 cup Grana Padano cheese, grated

Instructions

  1. Bring a large pot of water to a boil and cook pasta according to package directions. While pasta cooks make the sauce.
  2. In a large non stick sauté pan cook diced bacon in olive oil along with red pepper flakes until bacon is crisp.
  3. Once pasta is cooked, drain it but reserve 1/2 cup of the pasta water for the sauce. Add reserved pasta water to cooked bacon and bring it to a simmer, add in pasta, egg yolks, both cheeses and toss together over medium heat until sauce is thick and cheese is melted.
  4. Garnish with fresh herbs and more cheese if desired and season with salt and pepper to taste.
