Spicy Shrimp, Corn and Poblano Soup

Unsaved Spicy Shrimp, Corn and Poblano Soup

Ingredients

  • 2 tbsp Canola Oil
  • 1/2 cup White onions, sliced
  • 1 tsp Garlic cloves, minced
  • 1 lb Argentine Peeled & Deveined Shrimp 21/30 Ct.
  • 1/4 tsp Cayenne Pepper Seasoning, or as needed for spice level
  • 2 cups Super Sweet White Corn
  • 21 oz Cream of Poblano Soup
  • 10.5 oz Chicken Broth

Instructions

  1. Place a medium pot over medium heat, add oil and allow to get hot.
  2. Add onions and garlic and stir-fry 3 to 4 minutes or until onions are just translucent.
  3. Add shrimp and cayenne pepper and cook approximately 1 minute before adding corn, soup and chicken broth.
  4. Bring soup to a simmer and allow to cook approximately 10 to 15 minutes or until shrimp are completely opaque and fully cooked.
  5. Season to taste then serve over rice if desired.
