Spicy Shrimp, Corn and Poblano Soup

Ingredients
- 2 tbsp Canola Oil
- 1/2 cup White onions, sliced
- 1 tsp Garlic cloves, minced
- 1 lb Argentine Peeled & Deveined Shrimp 21/30 Ct.
- 1/4 tsp Cayenne Pepper Seasoning, or as needed for spice level
- 2 cups Super Sweet White Corn
- 21 oz Cream of Poblano Soup
- 10.5 oz Chicken Broth
Instructions
- Place a medium pot over medium heat, add oil and allow to get hot.
- Add onions and garlic and stir-fry 3 to 4 minutes or until onions are just translucent.
- Add shrimp and cayenne pepper and cook approximately 1 minute before adding corn, soup and chicken broth.
- Bring soup to a simmer and allow to cook approximately 10 to 15 minutes or until shrimp are completely opaque and fully cooked.
- Season to taste then serve over rice if desired.
