Spicy Pineapple Shrimp

Ingredients
- 1 tsp Canola oil
- 3/4 lb Raw peeled and deveined tail-off large Gulf shrimp, peeled & deveined
- 1 tsp Fresh garlic clove, minced
- 1 Jalapeño pepper, seeded & diced
- 1 Lime(s), zested & juiced
- 1 cup Pineapple chunks in natural juice, drained & chopped
- 1/4 cup Fresh cilantro, chopped
Instructions
- Heat a large nonstick skillet to medium-high. Add oil and heat.
- Add shrimp, garlic, jalapeño, lime zest and juice. Sauté 5-6 minutes until shrimp are opaque.
- Add in chopped pineapple and cilantro.
- Serve over a bed of mixed greens or steamed rice
