Spicy Pineapple Shrimp

Ingredients

  • 1 tsp Canola oil
  • 3/4 lb Raw peeled and deveined tail-off large Gulf shrimp, peeled & deveined
  • 1 tsp Fresh garlic clove, minced
  • 1 Jalapeño pepper, seeded & diced
  • 1 Lime(s), zested & juiced
  • 1 cup Pineapple chunks in natural juice, drained & chopped
  • 1/4 cup Fresh cilantro, chopped

Instructions

  1. Heat a large nonstick skillet to medium-high. Add oil and heat.
  2. Add shrimp, garlic, jalapeño, lime zest and juice. Sauté 5-6 minutes until shrimp are opaque.
  3. Add in chopped pineapple and cilantro.
  4. Serve over a bed of mixed greens or steamed rice
