Spicy One Pot Shrimp with Orecchiette

Serves 6
Ingredients
- 1 tbsp Extra virgin olive oil
- 1 cup Red onions
- 1 tbsp Fresh garlic clove, roughly chopped
- 1/4 tsp Crushed red pepper flakes
- 1 Red bell pepper, cored, seeded and julienned
- 1 bunch Broccolini, roughly chopped
- 1 cup Sweet tomatoes
- 3 cups Low sodium vegetable broth
- 12 oz Orecchiette pasta
- 12 oz Shrimp, peeled and deveined
- 1/4 cup Parmesan Fresh Grated Cheese
Instructions
- Place a large heavy bottom pot over medium-high heat.
- Add olive oil to pan and allow it to heat.
- Stir in onions, garlic, red pepper flakes, and bell peppers. Cook for several minutes until onions and peppers begin to brown. Then add in broccolini and tomatoes. Cook for an additional 5 minutes.
- Stir in half of vegetable broth and allow liquid to come to a simmer, then stir in pasta.
- Once all of liquid has cooked off, add remaining stock stir briefly, cover and cook for 15 minutes.
- Last 4 minutes of cooking add shrimp to pot and cover.
- Remove from heat, stir in cheese and serve immediately.
