Spicy Lemon Parmesan Green Bean Casserole

Ingredients
- 1 1/2 lb Fresh French green beans
- 1 cup Red onions, thinly sliced
- 8 oz Mushrooms, thinly sliced
- 3 slices Bacon, chopped very finely
- 10.5 oz Cream of Poblano Condensed Soup
- 1 cup Half and half cream
- 3 oz Shredded Parmesan cheese
- 1/2 cup Crispy Jalapeños, Lightly Salted, (or to taste)
Instructions
- Preheat oven to 400ºF.
- Heat a 10-inch oven-safe skillet over medium-high heat (cast iron works great for this).
- Fill skillet about 1 inch deep with water and bring to a boil. Meanwhile, trim ends of beans then cut into thirds (or to desired length).
- Add beans to boiling water and stir and cook for 4 to 5 minutes. When beans are tender/firm, remove from pan and drain any excess water.
- Add onions, mushrooms, and bacon to pan. Sauté about 5 to 6 minutes until bacon is crispy, mushrooms are golden, and onions are softened.
- Add soup and cream to pan and stir well to combine. Add beans back into pan and stir to coat
- Sprinkle Parmesan cheese and fried jalapeños in an even layer over the top. Place pan uncovered in the oven for 15 minutes to toast onions and finish cooking the beans.
