Spicy Ground Turkey and Kale Over Rice

Serves 4

Ingredients

  • 2 cups H-E-B Select Ingredients Long Grain Brown Rice
  • 1 tbsp Vegetable oil
  • 1 lb Extra lean ground turkey
  • 2 tsp Sriracha sauce
  • 1 tsp Kikkomon All-Purpose Less Sodium Soy Sauce
  • 1 Medium Onion, julienned
  • 1 Fresh jalapeño pepper
  • 4 cups Fresh kale, chopped
  • 1 tbsp Garlic cloves
  • 1/2 cup Low sodium chicken broth

Instructions

  1. Cook rice according to the package directions.
  2. Heat half oil in a large nonstick skillet on medium-high. Add in ground turkey. Break turkey into smaller pieces using the back of a wooden spoon or spatula as it cooks. Add in Sriracha and soy sauce. Once turkey is cooked remove it from pan and set aside.
  3. In same pan, add remaining oil and let it heat. Add in onions and jalapeños. Cook them for several minutes until onions become translucent. Then add in kale and garlic. Reduce heat and continue to cook for several minutes stirring frequently.
  4. Finally pour in chicken broth. Bring to a low simmer, return turkey to pan and cover. Let kale and turkey mixture to cook for several minutes until the liquid is gone.
  5. Serve turkey and kale over rice or in a taco!
