Spicy Crispy Carnita Torta

Ingredients
- 4 Bakery bolillo rolls
- 1 tbsp Olive oil
- 12 oz Fully cooked seasoned pork carnitas de cerdo
- 1 Small orange
- 7 oz Refried pinto beans with jalapeños, warmed up according to package directions
- 4 tbsp Habanero mayonnaise
- 1/2 cup Fresh cilantro sprigs
- 1/3 cup Pickled red onions, sliced very thin
Instructions
- Heat oven to 375ºF. Meanwhile, cut a wedge from end to end out of the top of each bolillo. Set aside for another use. Place bolillos on a baking sheet and heat for 5 minutes. Keep warm while filling heats.
- Heat a large skillet over medium heat. Add oil and carnitas. Stir and cook for about 5 minutes, or until edges start to turn brown and crispy. Squeeze 1/2 a small orange or mandarin over meat. Stir and remove from heat.
- Divide beans equally among heated bolillos. Drizzle habanero mayonnaise over the beans and add a layer of cilantro sprigs. Divide carnitas between bolillos and top with pickled onions.
