Spice Crusted Lamb Lollipops

Ingredients

  • 1 tbsp Cumin seeds
  • 1 tbsp Coriander seeds
  • 1 tbsp Fennel seeds
  • 1/2 tbsp The Spice Hunter Global Fusion Smoky Turmeric Rub
  • 1 1/2 tsp Kosher salt, plus more as needed
  • 1 1/2 tsp Ground black pepper, plus more as needed to taste
  • 1/4 cup Extra virgin olive oil, plus more as needed to coat lamb evenly
  • 3 1/3 lb Rack of Lamb-Frenched, approximately 3 to 4 pound rack, ribs cut off into individual lollipops

Instructions

  1. Set a pan over medium heat and add cumin, coriander, and fennel seeds. Toast for 3 to 5 minutes, gently moving the pan to keep spices from burning.
  2. When spices are lightly toasted and very fragrant, remove from heat and allow to cool before transferring to a blender and grinding into a fine powder.
  3. Add toasted ground spices to a small bowl along with turmeric and salt and pepper. Mix well to combine.
  4. In a bowl or shallow baking dish, drizzle olive oil over lamb and massage to evenly coat.
  5. Season lamb liberally on all sides with toasted spice mixture, cover, and refrigerate for at least 4 hours. Overnight is recommended.
  6. Once lamb has marinated, set aside at room temperature while preheating the grill to 350ºF.
  7. Place lamb on hot grill and cook for 3 to 5 minutes. Flip and cook an additional 3 to 5 minutes or until desired temperature is reached (140ºF is recommended).
  8. Remove lamb from grill and allow to rest for at least 5 to 7 minutes before serving. Season to taste with cracked pepper and salt as needed.
