Spezzatino e Polenta (Beef Stew with Polenta)

Ingredients
- 14 oz Beef broth
- 1/4 cup All purpose flour
- 1/2 tsp Black pepper
- 2 lb Boneless beef chuck, cut into 1 inch chunks
- 3 tbsp Italian extra virgin olive oil
- 2 sprigs Fresh rosemary
- 1 1/2 cups Italian dry red wine
- 14 oz Italian crushed tomatoes
- 1/4 cup Tomato paste
- 1 1/2 tsp Kosher salt
- 1 stick Celery, diced
- 1/2 cup Chopped onion
- 4 Medium carrots, cut into 1 inch chunks
- 18 oz Italian Polenta
- 1/2 cup Fresh flat leaf parsley, chopped
Instructions
- In a large pot, bring the beef broth to a simmer.
- Combine flour and pepper in a bowl, add beef, and toss to coat.
- Heat olive oil in another large pot, add beef, and brown on all sides.
- Add rosemary and red wine. Turn heat to high and reduce wine by half. Return to medium heat.
- Pour in tomatoes, tomato paste, and 4 oz. of the broth. Reduce heat to low, cover, and simmer for 10 minutes.
- Add salt and chopped vegetables, cover, and simmer on low heat for 2 hours or until meat is tender, adding broth as needed.
- Meanwhile, cook polenta according to package directions.
- To serve, spoon polenta onto plates, ladle beef stew over the top, and garnish with parsley.
