Spezzatino e Polenta (Beef Stew with Polenta)

Ingredients

  • 14 oz Beef broth
  • 1/4 cup All purpose flour
  • 1/2 tsp Black pepper
  • 2 lb Boneless beef chuck, cut into 1 inch chunks
  • 3 tbsp Italian extra virgin olive oil
  • 2 sprigs Fresh rosemary
  • 1 1/2 cups Italian dry red wine
  • 14 oz Italian crushed tomatoes
  • 1/4 cup Tomato paste
  • 1 1/2 tsp Kosher salt
  • 1 stick Celery, diced
  • 1/2 cup Chopped onion
  • 4 Medium carrots, cut into 1 inch chunks
  • 18 oz Italian Polenta
  • 1/2 cup Fresh flat leaf parsley, chopped

Instructions

  1. In a large pot, bring the beef broth to a simmer.
  2. Combine flour and pepper in a bowl, add beef, and toss to coat.
  3. Heat olive oil in another large pot, add beef, and brown on all sides.
  4. Add rosemary and red wine. Turn heat to high and reduce wine by half. Return to medium heat.
  5. Pour in tomatoes, tomato paste, and 4 oz. of the broth. Reduce heat to low, cover, and simmer for 10 minutes.
  6. Add salt and chopped vegetables, cover, and simmer on low heat for 2 hours or until meat is tender, adding broth as needed.
  7. Meanwhile, cook polenta according to package directions.
  8. To serve, spoon polenta onto plates, ladle beef stew over the top, and garnish with parsley.
