Spanish Tortilla with Chorizo

Ingredients

  • 1/4 cup Olive oil
  • 8 oz Baby Yukon potatoes, cut in half
  • 1 Small white onion, sliced
  • 5 oz Hot chorizo
  • 10 Large eggs, beaten
  • 4 oz Manchego Cheese, chopped

Instructions

  1. Heat oil in a large non-stick skillet over medium-high heat.
  2. Add potatoes, onions and salt. Cook approximately 20 minutes, flipping potatoes occasionally, until tender but not yet browned. If oil begins to bubble, reduce heat.
  3. Once potatoes are tender add in chorizo and cook for 4 to 5 minutes.
  4. Add eggs and cheese to skillet. Stir briefly and once the eggs begin to scramble, reduce heat to low and cover with a lid or large pan.
  5. Continue to cook egg mixture on low heat 10 additional minutes, shaking pan occasionally to prevent sticking.
  6. Once tortilla is set in the middle, remove from heat and let it set for 4 to 5 minutes covered, then carefully flip to a serving dish or tray. Cut into wedges and serve.
