Spanish Tortilla with Chorizo

Ingredients
- 1/4 cup Olive oil
- 8 oz Baby Yukon potatoes, cut in half
- 1 Small white onion, sliced
- 5 oz Hot chorizo
- 10 Large eggs, beaten
- 4 oz Manchego Cheese, chopped
Instructions
- Heat oil in a large non-stick skillet over medium-high heat.
- Add potatoes, onions and salt. Cook approximately 20 minutes, flipping potatoes occasionally, until tender but not yet browned. If oil begins to bubble, reduce heat.
- Once potatoes are tender add in chorizo and cook for 4 to 5 minutes.
- Add eggs and cheese to skillet. Stir briefly and once the eggs begin to scramble, reduce heat to low and cover with a lid or large pan.
- Continue to cook egg mixture on low heat 10 additional minutes, shaking pan occasionally to prevent sticking.
- Once tortilla is set in the middle, remove from heat and let it set for 4 to 5 minutes covered, then carefully flip to a serving dish or tray. Cut into wedges and serve.
