Spaghetti Squash and Meatballs

Ingredients
- 1 Medium spaghetti squash
- 1/4 cup Olive oil, divided use
- 1/2 cup Yellow onions, medium diced
- 2 Medium garlic clove, minced
- 12 Meatless meatballs
- 2 cups Marinara sauce
Instructions
- Drizzle spaghetti squash with 1/2 the olive oil. Place squash cut-side down in a microwave-safe casserole dish. Add warm water until it's a quarter-inch up the sides of the squash. Cover tightly with plastic wrap and poke several holes for venting. Microwave for 12 to 15 minutes until a sharp knife easily pierces the squash. Remove from microwave and pour off water. Flip squash and shred using two forks (discard the skin).
- In a large skillet or saucepan, heat remaining oil over medium-high heat. Add onion, garlic, and meatballs and cook for 2 to 3 minutes or until onions are translucent.
- Turn heat down to medium and stir in marinara sauce. Cover and cook for 10 minutes, stirring occasionally.
- Place 1 cup of spaghetti squash in each bowl and top with 3 meatballs and 1/2 cup of pasta sauce. Garnish with nutritional yeast (or Parmesan cheese if not making it vegan).
