Spaghetti all’Amatriciana

Serves 6

Ingredients

  • 10 oz Guanciale, cut into small cubes
  • 1 tsp Ground black pepper, divided use
  • 10 oz Crushed San Marzano tomatoes
  • 1 tbsp Italian extra virgin olive oil
  • 16 oz Spaghetti
  • 3 oz Pecorino Romano cheese, freshly grated

Instructions

  1. Starting with a cold pan, slowly cook the guanciale to render out the fat until guanciale is crispy.
  2. Cut guanciale into small cubes.
  3. Remove 1/3 of guanciale, and set aside.
  4. To the remaining guanciale, add some black pepper and crushed tomatoes. Cook until slightly thickened, about 6 minutes. Check seasoning and set aside.
  5. Cook the pasta in heavily salted boiling water
  6. When pasta is al dente, drain and add to the sauce to finish cooking for about 2 to 3 minutes.
  7. Serve hot, dressed with crispy guanciale (previously set aside), freshly grated Pecorino Romano, and extra black pepper.
