Quick & easy:Soyrizo, Bean and Cheese Tostadas

Ingredients

  • 4 Corn with nopal tortillas, as needed
  • 8 oz Soy chorizo
  • 6 oz Mexican style cheese, thick shredded, approximately 1 to 1.5 ounces of cheese per tostada
  • 8 oz Fat free refried black beans, approximately 2 oz per tostada

Instructions

  1. Remove casing from soy chorizo and discard. Place chorizo in a non-stick skillet and cook until fully heated through and just starting to crisp up.
  2. Arrange 4 tortillas on a sheet pan. Layer each with beans, cheese, and cooked soy chorizo.
  3. Bake at 350ºF until cheese is just melted. Garnish with shredded lettuce, pico de gallo, or guacamole if desired.
