Southwest Tamale Soup

Serves 4
Ingredients
- 1 tbsp Extra virgin olive oil
- 12 Fully cooked pork tamales, or flavor of your choice, cut into 1 inch pieces
- 2 oz Cans cream of poblano soup
- 2 1/2 cups Whole milk
- 4 oz Canned green chilies, chopped
Instructions
- Place a large soup pot over medium-high heat. Add oil and tamales. Cook and stir to warm tamales through and brown slightly.
- Reduce heat to medium, add both cans of soup, milk and green chilies. Stir to combine and bring to a simmer. Serve warm.
- Chef's Note: Garnish with finely chopped green onions, cilantro and tortilla strips if desired.
