Southwest Tamale Soup

Serves 4

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 12 Fully cooked pork tamales, or flavor of your choice, cut into 1 inch pieces
  • 2 oz Cans cream of poblano soup
  • 2 1/2 cups Whole milk
  • 4 oz Canned green chilies, chopped

Instructions

  1. Place a large soup pot over medium-high heat. Add oil and tamales. Cook and stir to warm tamales through and brown slightly.
  2. Reduce heat to medium, add both cans of soup, milk and green chilies. Stir to combine and bring to a simmer. Serve warm.
  3. Chef's Note: Garnish with finely chopped green onions, cilantro and tortilla strips if desired.
