Southwest Roasted Turkey Tender

Ingredients
- 1 3/4 lb Turkey Breast Tenderloins
- 2 tsp Kosher salt
- 1/2 cup Fire roasted tomatoes
- 2 tbsp Fresh green onions
- 4 Jalapeño Monterey Jack thin sliced cheese
Instructions
- Preheat oven to 400ºF. Line a sheet pan with parchment paper and set aside.
- Place a large non-stick skillet over medium heat. Spray tenderloins with a little non-stick spray and season with salt. Place in hot skillet and brown on each side.
- Transfer tenders to prepared sheet pan and bake for 10 minutes.
- Remove from oven and top with fire-roasted tomatoes, green onions, and sliced cheese. Return to oven until cheese melts and is slightly colored.
- Serve hot.
