Sous vide Lamb with Harissa Glaze

Ingredients

  • 1 Frenched 4-Rib Lamb Rack, about 1 lb total
  • 1 1/2 tbsp Adams Reserve Mediterranean House All Purpose Rub
  • 1 tbsp Olive oil
  • 2 tbsp Honey
  • 2 tbsp Zwita Mild Harissa Dried Chili Paste
  • 1 tbsp Butter
  • 1/4 cup Pomegranate arils

Instructions

  1. Preheat K+T sous vide and water bath to 133ºF. Season lamb evenly with Adams rub and place in a vacuum seal bag and seal, or in a zip-top bag with most of the air removed. Place in the sous vide bath for 2 hours.
  2. Remove bag from bath and set aside to rest for 5 to 10 minutes.
  3. Heat olive oil in a large sauté pan set over medium-high heat. Remove lamb from bag, reserving any cooking juices, and pat dry. Place lamb fat-side down in pan. Sear for 1 minute then flip and sear for an additional minute.
  4. Flip lamb again so fat side is facing down. Reduce heat to medium-low and add honey, harissa, and reserved cooking juices. Stir to combine and create a glaze. Add butter to the pan and stir.
  5. Turn lamb in pan to coat with glaze. Remove from heat and let rest for 3 to 5 minutes before serving. Garnish with pomegranate arils.
