Soft Scramble with Smoked Salmon, Mushrooms & Togarashi

Serves 4
Ingredients
- 1/4 cup Extra virgin olive oil
- 2 tbsp Shallot(s), minced
- 8 oz Mushrooms, sliced thin
- 1/2 tsp Ichimi Togarashi, plus more as needed for spice
- 8 Large eggs, whisked together until smooth
- 7 oz Atlantic Smoked Salmon, roughly chopped
Instructions
- Set a large non-stick skillet over medium-high heat, add oil allow to get hot. Add shallots, mushrooms and togarashi.
- Stir fry mixture 5 to 6 minutes. Season with a pinch of salt and pepper. Add eggs, and fold into mixture until they just start to set.
- Turn heat down to low and continue to fold until eggs are just set but still a touch wet looking. Remove from heat.
- Fold salmon into eggs off the heat. Garnish with fresh chives if desired and season to taste.
- Chef's Note: Eggs should just be set when removed from heat, residual heat will cook eggs and warm salmon.
