Unsaved Soft Scramble with Smoked Salmon, Mushrooms & Togarashi

Ingredients

  • 1/4 cup Extra virgin olive oil
  • 2 tbsp Shallot(s), minced
  • 8 oz Mushrooms, sliced thin
  • 1/2 tsp Ichimi Togarashi, plus more as needed for spice
  • 8 Large eggs, whisked together until smooth
  • 7 oz Atlantic Smoked Salmon, roughly chopped

Instructions

  1. Set a large non-stick skillet over medium-high heat, add oil allow to get hot. Add shallots, mushrooms and togarashi.
  2. Stir fry mixture 5 to 6 minutes. Season with a pinch of salt and pepper. Add eggs, and fold into mixture until they just start to set.
  3. Turn heat down to low and continue to fold until eggs are just set but still a touch wet looking. Remove from heat.
  4. Fold salmon into eggs off the heat. Garnish with fresh chives if desired and season to taste.
  5. Chef's Note: Eggs should just be set when removed from heat, residual heat will cook eggs and warm salmon.
