Soft Garlic Spread with Sicilian Olive Oil

Ingredients
- 1 cup Peeled Garlic Cloves, peeled and ends trimmed
- 4 Thyme, sprigs
- 1/2 tsp Crushed red pepper flakes, plus more as needed for heat
- 1 tsp Dried oregano
- 1 1/2 cups Extra Virgin Olive Oil, plus more as needed to cover garlic
Instructions
- In a smaller stainless steel pot or Dutch oven, add garlic cloves, thyme, red pepper flakes and oregano.
- Pour olive oil over mixture until garlic is just covered. Set pot over very low heat for 30 to 45 minutes, making sure oil never gets past a low simmer.
- Adjust heat as needed to make sure oil doesn't burn. Cook until garlic is just starting to brown and is very soft when pressed against side of pot.
- Remove from heat once garlic is soft and allow to cool completely. Remove thyme stems and discard.
- Pour cool mixture into blender and puree until smooth. Season to taste.
- Refrigerate until ready to use. Spread on crusty bread or use in a salad dressing or as a sauce on top of beef, chicken or pasta.
- Chef Note: If desired, leave soft garlic mixture whole for a better texture instead of pureeing it.
