Snap Peas With Tarragon-Mustard Vinaigrette

Ingredients
- 1 lb Sugar snap peas
- 1/8 tsp Kosher salt
- 1 tbsp Fresh tarragon, chopped
- 1 tbsp Extra virgin olive oil
- 1 tbsp White wine vinegar
- 1 Shallot, minced
- 1/8 tsp Ground black pepper
- 1 tsp Dijon mustard
- 1/2 tsp Granulated sugar
Instructions
- Bring 1 quart water to a boil in a 3 quart pot.
- Cook snap peas in boiling water 2 minutes until crisp and tender.
- Drain peas and rinse with cold water to stop cooking; drain well.
- For vinaigrette dressing, whisk all ingredients (except snap peas) together in a medium bowl.
- Toss snap peas in dressing and serve.
