Instructions

  1. Preheat oven to 350ºF.
  2. Set a large non-stick sauté pan over medium-high heat. Add oil and white onions and stir-fry 5 to 7 minutes, or until onions are just soft.
  3. Add meat to onions and continue to cook until meat is just browned and cooked through. Turn off heat and set aside.
  4. Lightly coat a large casserole dish approximately 9x13-inches with non-stick spray. Add lime juice to water and place into a shallow dish.
  5. To make enchiladas, dip tortillas quickly in lime water and spoon a generous amount of meat mixture into each and roll up tightly and place into casserole dish. Repeat with each tightly packing them together.
  6. Cover enchiladas evenly with salsa and cheese. Bake 15 to 20 minutes or until cheese is bubbly and slightly browned. Garnish with green onions if desired.
