Smothered Carne Guisada Enchiladas

Ingredients
- 1 1/2 lb Seasoned Beef for Carne Guisada
- 1/4 cup Fresh lime juice, juice
- 1/2 cup White onions, diced small
- 12 Flour tortillas, plus more as needed
- 1/2 cup Green onions, chopped
- 2 cups Mexican Style Blend Shredded Cheese, shredded
- 2 tsp Vegetable oil
- 16 oz Chipotle Salsa
- 2 cups Water
Instructions
- Preheat oven to 350ºF.
- Set a large non-stick sauté pan over medium-high heat. Add oil and white onions and stir-fry 5 to 7 minutes, or until onions are just soft.
- Add meat to onions and continue to cook until meat is just browned and cooked through. Turn off heat and set aside.
- Lightly coat a large casserole dish approximately 9x13-inches with non-stick spray. Add lime juice to water and place into a shallow dish.
- To make enchiladas, dip tortillas quickly in lime water and spoon a generous amount of meat mixture into each and roll up tightly and place into casserole dish. Repeat with each tightly packing them together.
- Cover enchiladas evenly with salsa and cheese. Bake 15 to 20 minutes or until cheese is bubbly and slightly browned. Garnish with green onions if desired.
