Smoky Turkey and Black Bean Chili

Serves 4

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Ground turkey
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Steak seasoning
  • 8 oz Baby bella mushrooms, chopped into small pieces
  • 1/2 Medium red onion, finely chopped
  • 20 oz Canned diced tomatoes and green chilies
  • 15 oz No-salt canned black beans
  • 1/4 cup Fresh cilantro, leaves only, finely chopped

Instructions

  1. Heat a large pot over medium-high heat. Add oil, turkey, cumin, paprika, and steak seasoning. Stir and cook until turkey is cooked through and starting to brown a little.
  2. Add mushrooms and onions. Stir and cook for 4 to 5 minutes until onions start to soften.
  3. Add tomatoes with green chilies and beans. Stir to combine, reduce heat to medium, and cover. Simmer for 5 to 8 minutes, or until tomatoes are cooked through.
  4. Remove from heat and stir through fresh cilantro. Serve with grated cheese or sour cream as desired.
