Smoky Pancetta Cauliflower Bake

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 2 Medium cauliflower head, trimmed, leaves removed, rough chopped into bite size pieces
  • 1/4 cup Red onions, medium diced
  • 1 tsp Fresh garlic clove, minced
  • 1/4 cup Water
  • 9.8 oz H-E-B Just the Sauce Smoky Pancetta
  • 1/4 cup Parmesan cheese, shredded

Instructions

  1. Preheat oven to 400ºF. Spray a 9x13 inch baking dish with non-stick spray and set aside.
  2. Heat a large skillet over medium heat, and add oil, cauliflower, onion, and garlic. Cook 4 to 5 minutes stirring frequently .
  3. Add 1/4 cup water and cook 1 minute then add smoky pancetta sauce and toss to coat. Pour into baking dish and sprinkle with Parmesan cheese.
  4. Bake 20 minutes until top is browned and cauliflower is fork tender.
