Smoky Pancetta Cauliflower Bake

Ingredients
- 2 tbsp Extra virgin olive oil
- 2 Medium cauliflower head, trimmed, leaves removed, rough chopped into bite size pieces
- 1/4 cup Red onions, medium diced
- 1 tsp Fresh garlic clove, minced
- 1/4 cup Water
- 9.8 oz H-E-B Just the Sauce Smoky Pancetta
- 1/4 cup Parmesan cheese, shredded
Instructions
- Preheat oven to 400ºF. Spray a 9x13 inch baking dish with non-stick spray and set aside.
- Heat a large skillet over medium heat, and add oil, cauliflower, onion, and garlic. Cook 4 to 5 minutes stirring frequently .
- Add 1/4 cup water and cook 1 minute then add smoky pancetta sauce and toss to coat. Pour into baking dish and sprinkle with Parmesan cheese.
- Bake 20 minutes until top is browned and cauliflower is fork tender.
